From the hills of Maramureș to the old kitchens of Wallachia, it arrives dense, fragrant, unapologetically real, a slab of spring itself, cut with a knife that’s seen generations. You start with lamb organs, lungs, liver, heart, boiled just enough to tame them, then chopped fine, almost ritualistically. Green garlic and wild dill crash into the mix, sharp and grassy, the kind of aroma that hits you before the plate even lands. Eggs bind it, bread softens it, and sometimes a lace of caul fat wraps it all like an edible promise.
