I had my first taste of 120 month aged parmigiano reggiano. Absolutely worth it. Yes it was insanely expensive i dont want to hear it im dying so i wanted to check it off my bucket list regardless.

Does the appearance of these crystals mean that the cheese will have less lactose? I’ve always heard that the more aged/dryer the cheese the less lactose is in it. I have a mild lactose intolerance so I’m always on the hunt for something delicious that won’t hurt my tum 😅
