THE RECIPE: OCTOPUS CEVICHE STEP 1: SET THE OCTOPUS: In a chilled bowl, add octopus and toss gently with: Juice of 3–4 limes (just enough to coat, not drown). ¾ tsp Me Myself & Lime® Seasoning. Let rest 10 minutes. The color should bloom to salmon-ruby, not pale. STEP 2: LAYER THE DEPTH: Add: 1½ tbsp Bell Of The Ball® Avocado Oil. ¼ tsp Bell Of The Ball® Seasoning. Fold gently. Taste. You’re looking for: Citrus first. Soft smoke second. Fruit warmth last. STEP 3: ADD THE ACCENTS: Fold in: Red chili slices (to taste). Cilantro leaves. Basil (very restrained). Rest another 5 minutes in the fridge. STEP 4: PLATING (THIS IS THE LOOK): Spoon ceviche into a chilled bowl or shallow plate. Arrange a few extra chili slices on top. Finish with a light herb scatter. Serve fried plantain chips on the side, never underneath. STEP 5: FINAL COLOR READ: Ceviche: ruby-salmon glow. Herbs: fresh green pops. Chili: sharp red contrast. Chips: golden frame. If it looks cloudy, too much lime went in.
