Roasted Butternut Squash & Couscous 🍂🍁 This roasted butternut squash and pearl couscous is the perfect combination of savory, sweet, and fresh! The roasted squash, dried fruit, and fresh herbs come together beautifully, and it’s so simple to make. Here’s what I used: 1 butternut squash, peeled and cut into small cubes 3 shallots, chopped (you can use red onion, regular onion or garlic) Pearl couscous (I used my favorite from Trader Joe’s!) 1 date, chopped Dried Craisins Fresh dill and parsley Olive oil @California Olive Ranch Dried sage Salt & pepper Garlic and Onion powder Here’s how I made it: I cut up my butternut squash into small, equal-sized cubes and added the chopped shallots and seasoned everything with dried sage, salt, pepper, garlic powder, onion powder, and a drizzle of oil. I roasted the squash in my @Ninja Kitchen Ninja oven at 375°F for about 30 minutes, until it was just tender. I cooked my couscous according to the package instructions. Once the couscous was cooked, I removed it from the pan and added the roasted butternut squash mixture to warm through. I added the couscous back to the pan, along with the chopped date, dried craisins, and a mixture of fresh dill and parsley. I gently mixed everything together and let it heat through before serving. The sweetness from the butternut squash and dried fruit, the warmth of the sage, and the freshness of the herbs make this such a delicious side dish for fall. 🍂 #EasyRecipe #FallRecipes #healthy #couscous #sidedish
