@lacouplet: Chocolate Sourdough! I absolutely loved it! Most delicious bread ever! Ingredientes: 274g water 74g starter 370g bread flour 20 g cocoa chocolate powder 9g of salt Half a bar of dark chocolate. 👉🏼 *(I susbtracted 20 g of flour and replaced it with the cocoa chocolate powder). Optional: I made a paste with the cocoa powder and water). Here’s how I did it: -Add water, starter and flour and mix it all well. -Rest 30 minutes. -Add salt and incorporate well. And then do 1st stretch and fold. -Continue with 2 rounds of stretch and folds every 30 min. -On the 2nd stretch and fold add the chocolate pieces. -2 coil folds every 30 min. -Bulk fermentation 2 hrs at room temp. -if you’re adding the chocolate paste, add it during lamination. -Pre shape, 15 min bench rest. -Cold fermentation for 15 - 24 hrs. -Preheat oven at 495F for 45 min. -Bake 495F for 20 min.
