HOLY POTATO 🥔  I used polarized light to look at the insides of potato cells! This illumination technique is often used in geology so I now believe that sweet potatoes rock 😎 All the small bubbles looking like sleigh bells are starch granules! You can also see multicolour confettis floating around! These are structures containing carotenoids and they really look like they’re ready for the holidays!  Lots of different plants, like potato, ginger, turmeric and mango, transform the sugar they made by photosynthesis into starch. This starch is stored in specialized organs like grains and tubers for later use. You might think potatoes are roots but they’re actually tubers filled with storage cells called amyloplasts which accumulate starch! When environmental conditions are harsh, like during winter or droughts, the potato plant uses the carbs it stored inside tubers and feed on them nutrients.  Sweet potatoes, or Ipomoea batatas in latin, are not only rich in carbs but also in beta-carotene, which is a precursor of vitamin D. They also contain tons of vitamins C, B and E as well as calcium, iron and potassium! They’re also super rich in fibres so your bowels will thank you (or not, you know it better than I do haha). Unlike orange sweet potatoes, purple-coloured sweet potatoes contain anthocyanins which give them their colour and have antioxidant properties.  China is the largest producer of sweet potato and right after comes Vietnam. It’s also largely grown in developing countries, accounting for over 95% of the total production. Sweet potatoes are quite resistant to cold and can even be cultivated at altitudes as high as 2500m!  #fyp #Science #microscope #food
