Softest Roti’s ever👌 and they stay soft even the day after! Here are my tips for soft roti. This knowledge was passed down to me by my mother and gran who till today make Roti this way. This isnt the traditional indian way of making roti because theres no atta involved but this is how south africans make roti♥️ -Use a combination of oil and ghee, butter or rama. Oil keeps the dough soft and easy to roll and also keeps the roti soft which is why hours later and even the next day when heated that the roti is soft. Using the ghee, butter, rama when making the log, adds flakiness. - Use boiling water. This creates a soft dough and makes it easir to roll and less likely to tear. It somewhat precooks the flour in a way also. - Use margarine if you dont have ghee. This is for budgeting and economical reasons. My mother only makes her roti with rama and she has been doing so for years. So did my grandmother and great grandmother. Why? Because its cheaper than butter and still tastes great. - Rest your dough for 30 mins. This allows the flour to fully absorb the water and creates a soft dough. And lastly, do not overfry your roti. You want them cooked but not crackers😂 each roti should take you only a min max to cook fully so make sure you are doing this on a medium high heat.
