@in_sams_kitchen: How to make “Bagel” Crispy Rice Send this to your friends and follow for more of my fire recipes 🔥 INGREDIENTS: Crispy Rice: -Sushi rice (2 cups) -Cold water (2.5 cups) -Bay leaves (3, optional) -Rice vinegar (4tbsp) -Sugar (2tbsp) -Salt (1tsp) -Neutral oil (for frying) Toppings: -Cream Cheese (+chives if desired) -Cucumber -Shallot -Salmon roe -Capers -Chives -Aleppo pepper INSTRUCTIONS: Rinse the rice in a strainer until the water runs clear. Add the rice to a medium pot with cold water. Bring to a boil and then cover and reduce to low. Cook for 15 minutes. Remove pot from heat and let sit (covered) for another 10 minutes. In a small saucepan, add the rice vinegar, sugar and salt, and dissolve the sugar over medium heat. Once the 10 minutes is up, use a fork to fluff the rice, and then pour the vinegar mixture over the rice. Mix until combined. Place a layer of plastic wrap on a sheet pan, and spread the rice throughout the pan. Press down until the rice layer is even, and place in the freezer until the rice is chilled and firm, but not fully frozen (about 1.5-2 hours). Once the rice is chilled, remove from the sheet pan, and cut into a long rectangle (or small rectangles or squares), wetting your knife in between slices to prevent it from sticking. Deep fry each piece at 375 degrees until golden brown, making sure not to crowd the pan. Flip every 1-2 minutes. Remove from oil and let cool on a wire rack. Top the crispy rice with desired bagel toppings and enjoy! #crispyrice #bagels #bagel
