Red Beans and Rice. FULL RECIPE BELOW Ingredients: - 1 pound dried red beans - 1 large yellow onion, chopped - 1 green bell pepper, chopped - 2 celery stalks, chopped - 4 cloves garlic, minced - 1 1/2 lb smoked turkey wings and 1 pound smoked conecuh sausage, sliced - 2 bay leaves - 1 teaspoon dried thyme - 1 teaspoon dried oregano - 1/2 teaspoon cayenne pepper (optional) - 1 teaspoon paprika - 1/2 teaspoon black pepper - 1 teaspoon salt (adjust to taste) -1 teaspoon Cajun seasoning  - 6 cups water or chicken broth - 4 cups cooked white rice - 2 green onions, chopped (for garnish) - Hot sauce (optional, for serving) Instructions: 1. Soak the Beans: Rinse the dried red beans and place them in a large bowl. Cover with cool water and let them soak overnight. Drain and rinse before cooking. Remove any beans that look bad.  2. In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the smoked sausage and cook until brown, 2-3 minutes. Remove and set aside. Next, add in your smoked turkey and sear on each side for 2-3 minutes. Next, add your chopped onion, bell pepper, and celery. Cook until the vegetables are soft, about 5-7 minutes. Add the minced garlic and cook for another minute. 3. Stir in the bay leaves, thyme, oregano, cayenne pepper (if using), Cajun seasoning, paprika, black pepper, and salt. 4. Add the soaked and drained beans to the pot. Pour in the water or chicken broth. Bring to a boil, then reduce the heat to low and let simmer uncovered for about 2-3 hours, or until the beans are tender. Stir occasionally and add more water if needed to keep the beans covered. 5. Once the beans are tender, use a wooden spoon to mash some of the beans against the side of the pot to create a creamier texture. Continue to simmer for another 30 minutes to thicken the mixture. 6. Serve: Remove the bay leaves and smoked turkey. Pull the meat off the bone, chop or tear up and stir back into the beans. Serve the red beans over cooked white rice.
