Pot Roast Dinner 🥘 • • Ingredients: • 2.5 lb beef chuck roast • 4 carrots • 4 celery stalks • 1 yellow onion • 1 lb mini golden potatoes • 4 garlic cloves, minced • Salt, generous amount • Black pepper, generous amount • Garlic powder, generous amount • Smoked paprika, generous amount • Olive oil, for searing • 2 tbsp tomato paste • 1 tbsp beef bouillon base • 1½ cups dry red wine (I used Cabernet Sauvignon) • 2 tbsp all-purpose flour • 4¼ cups beef broth • 1 tsp onion powder • 1 tsp garlic powder • 1 tsp all-purpose seasoning • 1 tsp blackened seasoning • 1 tsp smoked paprika • 1 pack beefy onion soup mix • 4 sprigs rosemary • 2 bay leaves • ¼ cup unsalted real butter Instructions: 1. Preheat your oven to 350°F. 2. Pat the chuck roast dry and season generously with salt, pepper, garlic powder, and smoked paprika. 3. Heat olive oil in a large Dutch oven over medium-high heat. Sear the chuck roast on all sides until deeply browned, then remove and set aside. 4. Add the carrots, celery, and yellow onion to the same pot. Sauté for a few minutes, scraping the bottom of the pot to deglaze, add the minced garlic and cook until fragrant. 5. Add the tomato paste and beef bouillon base, stirring everything together. Pour in the wine and let it reduce by about 50%. 6. Add the flour and stir until well combined and thickened. Add the chuck roast back into the pot, then pour in the beef broth. 7. Add the onion powder, garlic powder, all-purpose seasoning, blackened seasoning, smoked paprika, beefy onion soup mix, rosemary, bay leaves, and butter. 8. Cover with the lid and bake at 350°F for 2 hours. After 2 hours, add the mini golden potatoes. Cover and return to the oven for 1 more hour. 9. After 3 hours, check that the roast is fork-tender and the potatoes are cooked through. 10.
