@laurenn.wright: strawberry shortcake cake recipe 🍰🍓✨ Ingredients 🧈🥚 Cakes -2 cups all-purpose flower -4 tsp baking powder -1/2 tsp salt -1 cup granulated sugar -1 tsp vanilla extract -1/2 cup unsalted butter, cold -1 cup milk Strawberry jam -2 cups mashed strawberries -2 cups granulated sugar -1/8 cup lemon juice Stabilized whipped cream -1 1/2 tsp unflavored gelatin -2 tbsp cold water -2 1/4 cups heavy whipping cream, cold -1/2 cup powdered sugar -1 1/2 tsp vanilla extract Instructions 📝 Cakes 1. Preheat the oven to 350°F and line a 8 inch round pan with parchment paper on the bottom and either spray the sides with cooking spray or butter and flour them. Set aside. 2. In a large mixing bowl combine the flour, baking powder, sugar, and salt and mix to combine. 3. Cut the cold butter into small pieces and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture starts to clump together. 4. Make a well in the center and add the milk and vanilla extract. Mix until just combined. 5. Transfer the batter to your prepared pan, using a rubber spatula to spread the batter into an even layer. 6. Bake for 25 minutes or until a knife inserted into the middle comes out mostly clean. Transfer the cake to a wire rack to cool for 15 minutes before running a butter knife along the edge of the cake and turning it out of the pan. Allow to cool completely before topping. (Do not put whipped cream on a warm cake) Strawberry jam 1. Combine mashed strawberries, sugar, and lemon juice in a heavy-bottomed saucepan; stir over low heat until sugar is dissolved. 2. Increase heat to high, and bring the mixture to a full rolling boil. Continue to boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). (I boil for 10 minutes) 3. Transfer jam into heat safe jar and allow to cool completely Stabilized whipped cream 1. Sprinkle gelatin over water & let bloom for 5 mins 2. In a mixing bowl combine heavy cream, powdered sugar and vanilla and mix on medium speed until reaching very soft peaks 3. Melt gelatin for 5 seconds in microwave or until melted. You do not want your gelatin to be warm 4. With your mixer on low, drizzle your gelatin into your whipped cream. Slowly increase speed of mixture and mix until reaching stiff peaks. Be careful not to over-mix. You want your frosting smooth & fluffy, not chunky. Assembling (I highly recommend putting the cake in the fridge/freezer in between steps to help keep the whipped cream firm. This will prevent the cream, jam & strawberries from sliding all over the place when you place the second layer of cake on top) 1. Place the first cake layer on a plate 2. Spread whipped cream evenly over the cake, making sure not to spread it too close to the edges. Place sliced strawberries on top of whipped cream. 3. Carefully add your strawberry jam on top of sliced strawberries and then spread more whipped cream over the top 4. Place the second layer of cake on top. The butter never combined with the dry ingredients. The dry mixture barely clumped together and there were still bits and pieces when I added the wet ingredients.....should I just toss it in the oven ? 😬
