I'm not a cook at all, but since we discovered pesto is a nut, cheese and leaf, I've made some cracking pestos. My favourite is Stilton, rocket and walnuts.

I did something similar but instead of pine nuts I used almonds to adjust for the bitterness of the arugula! Also worked very well

It's mindblowing how vegetables are known in different names in different English speaking countries. What North American know as Arugula is indeed called Rocket by Australian. Aubergine to British, but eggplants to Australian (and possibly everywhere in the world except the UK). Capsicum for Australian is bell pepper for North American. Very fascinating.
