What’s for dinner? Episode 5 - crispy potato wedges, sticky beef & buttery asparagus🤌🏼this is the perfect dinner - it’s simple, it’s high volume, packed with protein and full of flavour😍😍 enjoy for just 470 calories and 33g of protein! Makes 2 servings Ingredients
For the wedges - 400g potato - 1 tbsp olive oil
- Pinch of salt & pepper

For the sticky beef
- 250g 5% lean beef mince
- 100ml beef stock
- 2 tbsp soy sauce
- 1 tbsp sweet chilli sauce
- 2 tbsp honey - 1/2 tsp Garlic powder - 1/2 tsp Onion granules - 1/2 tsp Paprika - Pinch Salt & Black pepper 
For the asparagus
- 10g light butter
- 125g asparagus tips
- Pinch of salt & pepper

Other
- Pinch of sesame seeds
- Pinch of chilli flakes Method - Cut your potato into wedges, toss with olive oil, salt and pepper. Airfry for 30 minutes at 180°C, shaking frequently. Alternatively, pop onto a lined baking tray then cook in the oven for 30-40 minutes at 180C, turning frequently, until golden and slightly crispy.  - While the wedges cook, heat a non-stick frying pan over medium-high heat. Add some frylight or drop of olive oil followed by the beef mince and cook for 6-8 minutes, breaking it up with a spoon, until browned and cooked through. - Meanwhile, grab a jug or bowl and mix together the beef stock, soy sauce, sweet chilli sauce, honey, garlic powder, onion granules, paprika, salt and black pepper until well combined. - Pour your sauce into the pan with the beef then stir well and leave to simmer for 5 minutes until the sauce thickens slightly and coats the beef. - Once the sauce has thickened, spoon your beef mixture into a bowl, set aside and cover. - In the same pan, melt the light butter over medium heat. Add the chopped asparagus tips, season with salt and pepper, then cook for 4-5 minutes, stirring occasionally until tender but still with a slight crunch. - Divide the crispy wedges, sticky beef and buttery asparagus between bowls. Finish with a sprinkle of sesame seeds and chilli flakes, then enjoy!!
