@jujumaoo: Raising Cane’s Calamari 🦑 INGREDIENTS: Calamari Marinade: - 1kg squid rings - 1 tbsp garlic, onion, sage, paprika, oregano powder - 1 tbsp worcestershire sauce - 1 tbsp hot sauce (i’m using cholula) Dry Batter: - 1 1/2 cup all purpose flour and 1/2 cup cornstarch) - 1 tbsp garlic, onion, sage, paprika, oregano powder - Pepper to taste Wet Batter: - Place half of your dry batter in a separate bowl - 330 ml beer - 1 egg Served with: - Crinkle cut fries Raising Caines Sauce: - 1 ½ cup mayonnaise - 1 cup of tomato ketchup - 1 tbsp worce- stershire sauce - 1 tsp apple cider vinegar - 1 tsp White pepper - 1 tsp paprika, onion, garlic powder INSTRUCTIONS: - Start by seasoning your calamari with everything under calamari marinade. Toss and mix until each piece is coated, and set aside for later. - Make your dry batter by whisking together in a bowl all the ingredients under dry batter - Place half of that mixture in a separate bowl and add an egg and a beer. Whisk until it forms a thick batter. - To prepare your Raising Cane’s sauce, place each of the ingredients under sauce in a bowl. Adjust to taste. - Take each piece of calamari and coat it first with dry batter, then wet. Repeat one more time before frying at 165C in a pan with hot oil.
