Today I made Kuru Patlıcan Dolması, a traditional dish from southern Turkey made with dried aubergines (kuru patlıcan). During the summer harvest, aubergines (peppers/courgettes) are hollowed out, threaded onto strings, and left to dry in the sun. These strings of aubergines are a familiar sight across Turkey, often hanging like beautiful necklaces while preserving the season’s abundance for use throughout the year. To prepare kuru patlıcan dolması, the dried aubergines are first rehydrated before being stuffed with a mixture of rice, minced meat, garlic, parsley, dried mint, cumin, tomato paste, and pomegranate molasses. They are then gently simmered until tender. This recipe is a luvlyy example of traditional food preservation techniques and the ingenuity of Turkish home cooking.
