Continuing the Summer Dipping Oil series with these toasted lemon ricotta raviolis and grated tomato sauce 🍅🍋😍 This entire series feels like summer at golden hour, with little bowls of olive oil catching the light. It is elegant summer snacking at its finest. Each oil brings its own distinct personality to the table. Recipe below and in my Substack at Lenorenolanryan GRATED SUMMER DIPPING OIL: 2-3 ripe heirloom tomatoes 1-2 garlic cloves, grated 1/3 cup excellent olive oil Fresh chopped parsley and basil Zest of one lemon 3 T. toasted pine nuts Squirt tomato past Silk chili powder from @Burlap & Barrel Romano 1-2 tsp Italian seasonings Maldon salt Fresh cracked black pepper Cut the tomatoes in half and grate them over a bowl with a box grater, stopping when only the flattened skin remains in your hand. Let the grated tomato sit in a fine mesh strainer for 10–15 minutes to release excess water. Grate the garlic into the tomato pulp. Stir in olive oil, lemon zest, basil, parsley, pine nuts, tomato paste, silken chili powder, Pecorino Romano, salt, and black pepper. Stir together. BAKED RAVIOLIS: 12 oz. package cheese-filled fresh ravioli, @trader joes ricotta and lemon zest  Good olive oil  1/2 cup Panko or bread crumbs 1/2 cup grated Parmesan cheese A pinch or meore Italian seasonings A few shakes the silk chili spice Maldon salt and cracked black pepper Preheat the oven to 375 degrees. Mix the ravioli with the olive oil, salt, and pepper. Dredge the raviolis in the breadcrumb mixture. Place the raviolis on a parchment-lined sheet pan and bake for 10 minutes. Remove the pan, flip the raviolis over, and bake for another 5 minutes, or until crispy. Remove and serve with the tomato salsa. Garnish with more Pecorino and basil.
