Loaded Baked Potato & Chicken Casserole Prep Time: 20 minutes Cook Time: 45 minutes Total Time: 1 hour 5 minutes Servings: 6–8 Ingredients 2 lbs baby potatoes, halved (or russet potatoes, diced) 2 cups cooked chicken breast, cubed 8 slices bacon, cooked until crispy and crumbled 2 cups shredded cheddar cheese 1 cup shredded mozzarella cheese ½ cup sour cream ¼ cup mayonnaise 2 tablespoons butter, melted 2 teaspoons garlic powder 1 teaspoon onion powder 1 teaspoon smoked paprika 1 teaspoon salt ½ teaspoon black pepper 2 tablespoons chopped fresh parsley (for garnish) Instructions 1. Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish. 2. Roast the potatoes. Toss the potatoes with melted butter, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread them in a single layer on a baking sheet. Roast for 30–35 minutes, flipping halfway through, until golden brown and tender. 3. Prepare the creamy mixture. In a large bowl, combine the sour cream and mayonnaise. Stir in half of the cheddar cheese and half of the mozzarella until well mixed. 4. Assemble the casserole. Add the roasted potatoes and cooked chicken to the creamy mixture. Fold gently until everything is evenly coated. Transfer to the prepared baking dish. 5. Top with cheese and bacon. Sprinkle the remaining cheddar and mozzarella evenly over the top. Scatter the crumbled bacon over the cheese. 6. Bake for 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden. 7. Garnish with chopped fresh parsley before serving.
