Whether it’s for summer rolls, slicing into strips and using as noodles, or turning into these offensively good little pizzas – it’s endlessly useful. You can top these with whatever you’ve got. Chinese sausage and shrimp, or even tinned tuna – it all works. Cook them on a grill or in any hot, dry pan. Lay the rice paper straight in, spread a thin layer of egg over the surface, then load it up with whatever you like. Let it cook for 3–5 minutes, until the rice paper turns translucent and crispy.
