Cheesy Taco Beef Pasta 🔥 A dinner worthy of being on repeat because it’s quick to make, so easy and it’s absolutely BANGIN 🤭 taco chipotle spiced beef tossed with pasta drizzled with cheese sauce and coriander 😍 ‼️ For more quick and easy meal ideas grab my cookbook “Low-Cal Kitchen Bangers” link in bio 💕 Ingredients (serves 2): 120g dry linguine 225g lean beef mince Tsp chopped garlic 1 red pepper diced 1 red onion diced Heaped tsp chipotle paste Tsp chopped garlic 1 heaped tbsp taco seasoning 15g Tbsp tomato puree 100ml beef stock 120g passata 2 light cheesy slices 60ml semi-skimmed milk A couple of sprigs of fresh coriander chopped 💕Cook the pasta according to packet instructions. 💕Add the beef to a large pan and fry for 3-4 minutes until nearly browned. 💕Add the pepper and onion to the pan, frying until the veggies have softened. 💕Once soft, add in the chipotle paste, chopped garlic, taco seasoning, tomato puree, beef stock and passata. Mix to combine and return to the hob for a few minutes to thicken. 💕When the sauce has reduced slightly, take two ladles and combine with the pasta. Keep warm. 💕Make the cheese sauce by adding the cheese slices and milk to a pan. Stir continuously over medium heat for a couple of minutes. 💕Serve the pasta along with the remaining beef on top. Pour over the cheese sauce before garnishing with the fresh coriander. This is also one you can meal prep!!!
