My compost pile is in my chicken coop. SHTF = worms. I can pull pounds of protein with a few turns. Probably the lowest effort meat imaginable, just... unpleasant if necessary.

potatoes don't need much space, check out "potato boxes". Also sunchokes and sweet potatoes. Rabbits are also easy livestock.

I'd do buckwheat over regular wheat, it grows fairly quick, not super fussy, somewhat frost resistant.
