@deonnleonn: MANGO STICKY RICE | DEON LEON (KHAO NIAO MAMUANG) ข้าวเหนียวมะม่วง RICE •500g Glutinous rice •500g Water (1:1 ratio to rice) •Wash rice until the water runs clear. •Soak rice for 4 hours or overnight if you’re going to steam it. •No need to soak (if you want, you can soak it for an hour) if you are going to use a rice cooker. COCONUT SAUCE •2 cans (165ml x 2) Thai coconut cream •200g White Sugar (add or reduce depending on how sweet you want the sauce to be) •A pinch of Salt •1 Tbsp Cornstarch •2 Tbsp Water •Heat coconut cream in a sauce pan. •Add sugar, and salt in the pan, stir until the sugar has dissolved. •Add half of the sauce to the cooked sticky rice, mix well. •In a separate bowl, mix cornstarch and water. •Add the slurry (cornstarch and water) to the remaining coconut sauce. Mix while adding the slurry to prevent any clumps. This will be your coconut sauce. MANGO •3 Ripe Mangoes (less or more depending on how much mangoes you want) •Cut the cheeks of the mangoes. •Remove skin using a cup. •Cut slivers horizontally. PLATING •1 Pinch of black sesame seeds •1 Pinch of white sesame seeds •Place the sticky rice in a mound on a plate. •Fan the slivers of mangoes. •Add the coconut sauce on the sticky rice. •Sprinkle sesame seeds on top of the sauce.
