Let’s make vegan shukshouka 🫶 Ingredients - 2 cans diced tomatoes Large onion 1 tbsp Olive oil 2 tsp smoked paprika 1 tbsp rose harissa paste 1 tsp coconut sugar Salt and pepper Basil Pinch of chili flakes Plain tomato sauce 3 garlic cloves crushed 1 block Silken tofu Handful of Olives 1 eggplant Choice of vegan cheese paste (we used cashew) Baguette toasted Recipe- - dice onion and eggplant into small pieces then -warm olive oil in a pan on medium heat then add onion, eggplant, olives and garlic and cook for 5-10 minutes or until eggplant is soft - add paprika, salt, coconut sugar, diced tomatoes and rose harissa and mix through - Add tomato sauce to the consistency of your liking - Reduce the heat and let simmer for 20-30 until thick - Enjoy with a pinch of chopped basil, chili flakes and a lil vegan buttered baguette
