To make the onion "bloom" on its own after you slit your petals, soak the whole onion in ice water. It will "bloom". Drain on paper towel upside down, then dip into your milk mixture.

next time after you cut your slits turn it upside down in some cold water for a bit it will help it open up and make it easier to bread.
