For these frittata hot pockets, I started out by making a bacon, egg, and cheese frittata and while that was cooling, I put together a quick and simple Dijon mustard aioli. I decided to make these into a pumpkin shape since it’s October, but you can make them into any shape you want, or just cut the pastry into rectangles. I added the frittata to the puff pastry, sealed it up, brushed on an egg wash, sprinkled with flaky salt and then baked in the oven until golden brown.
