@chefjjskitchen: Qatari Mashkhool (المشخول القطري) Ingredients: - 2 onions - 4 cloves of garlic - small knob of ginger - 4 to 6 chilies ( optional ) - 3 bell peppers - 200 grams tomatoes - 1 kg chicken pieces - 2 cups of @canarybasmati - 2 tbsps tomatoes paste - small bunch of fresh coriander - 4 cubed up potatoes fried Aromatics & spices: - 2 sticks of cinnamon - 3 bay leaves - 4 cardamom pods - 2 cloves - 2 star anise - 1 tsp cumin powder - 1 tsp coriander powder - 1/2 tsp ginger powder - 1/2 tsp lumi powder - 1/2 tsp black pepper - 1/2 tsp cinnamon powder - 1/2 tsp turmeric - 1/2 tsp cardamom powder - finely chop all the veggies then sear them individually one at a time with the aromatics starting with the onions. - add the chicken. The spices and tomato paste and salt then sear everything in high for a couple of minutes. - add 3 cups of water and the potatoes then let the pot boil on medium till the chicken is fully cooked. - wash 2 cups of @canarybasmati then boil it in a good amount of water. Salt and a few knobs of butter only for 5 minutes or till it’s cooked half way through. - strain the rice and add it to the chicken pot ( you can add it directly on the chicken or take the chicken out and grill it for some color) - drizzle a bit of saffron water on the rice without stirring it then cover. And let it steam on the least heat possible for 30 minutes. - small tip: once it’s cooked leave it covered for another 15-20 minutes for best results. - flip it on a serving plate.
