Paleo Carrot Cake with Coconut “Cream Cheese” Frosting & Red Walnuts: Cake Ingredients Wet: • 4 large eggs, room temp • ½ cup pure maple syrup (half the original) • ⅓ cup coconut oil, melted & cooled • ¼ cup unsweetened almond milk • 1 tbsp raw apple cider vinegar • 2 tsp vanilla extract Dry: • 1¼ cups almond flour • ½ cup cassava flour (sub for coconut flour) • ⅓ cup tapioca flour • 1 tsp baking soda • ¼ tsp salt • 2 tbsp cinnamon • 1 tsp ground ginger • ¼ tsp nutmeg Fold in: • 2½ cups grated carrots • ½ cup chopped dates (instead of raisins) Layer & topping: • Crumbled red walnuts ⸻ Frosting Ingredients • 1½ cups raw cashews (soaked in hot water 2 hours, drained) • 1 cup coconut cream (thick part from chilled coconut milk) • ¼ cup maple syrup • ¼ cup coconut oil, melted • 2 tbsp lemon juice • 1 tsp apple cider vinegar • 2 tsp vanilla extract • Pinch of salt ⸻ Cake Instructions 1. Preheat oven to 350°F. Line two 8-inch cake pans with parchment paper. 2. In a large bowl, whisk together eggs, maple syrup, coconut oil, almond milk, vinegar, and vanilla. 3. In another bowl, mix almond flour, cassava flour, tapioca flour, baking soda, salt, and spices. 4. Stir dry ingredients into wet until just combined. 5. Fold in grated carrots and chopped dates. 6. Divide batter evenly between pans. Bake 22–25 minutes, or until a toothpick comes out clean. 7. Cool in pans for 30 minutes, then transfer to wire racks to cool completely. ⸻ Frosting Instructions 1. Place soaked cashews, coconut cream, maple syrup, coconut oil, lemon juice, vinegar, vanilla, and salt in a high-speed blender. 2. Blend until completely smooth and creamy. 3. Chill at least 1 hour (or overnight) to thicken before using. ⸻ Assembly 1. Place one cake layer on a serving plate. Spread a thick layer of frosting. Sprinkle with crumbled red walnuts. 2. Add the second cake layer, frost the top and sides. 3.
