In a pan with a drizzle of olive oil, season the salmon lightly with salt and pepper, then sear on both sides until golden. Since salmon is thick, cover the pan with a lid and cook over low to medium heat to ensure it's evenly cooked without burning the outside. 2. Once the salmon is done, set it aside. In the same pan, add 1 tbsp of butter, diced onions, and sliced garlic. Sauté until golden and fragrant. Then add 2–3 tbsp Mak soysauce and 1 tbsp mirin. Stir and simmer for 1–2 minutes until slightly reduced. 3. Season warm rice with a little sushi vinegar (sold separately – optional), then top with the grilled salmon and the onion-garlic soy glaze.
