This is fireeeee, but it would be cool if after the second round of oven you blended the tomatoes with the same spices u used for the oil rub at the beginning then slow cooked the chicken in the sauce, or not, then putting aside the chicken, adding stock to the pot and cooking chicken in that pot and as a side, you could make a mash with the potatoes and onions and maybe even throw some peppers in the mix
