Carbon steel is not super hard, and it dulls faster than stainless blades. BUT it can be shalrned to razor sharpness. Stainless doesn't get as sharp.

Lots of wrong information here. High carbon steel can be sharpened easier, and sharper than stainless. But it gets dull quick.

Sharp is not a selling feature. 8 can sharpen plastic, but it won't last. Yes it is how long it holds an edge and how many times you can sharpen before needing to replace.
