Tofu Nuggets 1, 16 oz container extra firm tofu, drained Kosher salt 1 1/2 tbsp cornstarch 1 tsp ground coriander 1/2 tsp white pepper 1 1/2 tbsp avocado oil plus more for sautéing 2 shallots, thinly sliced 1 jalapeño, seeds and membranes removed then thinly sliced Mango Sauce 1 honey mango, peeled and cubed 1 jalapeño, roughly chopped 2 scallions, thinly sliced (white and green portions separated) 1 tbsp garlic chili sauce 1 tbsp tamari 1-2 tbsp agave (adjust based on mangos sweetness) 2 garlic cloves, crushed Juice and zest of 1 lime 3/4 cup vegetable broth or water 2 tsp cornstarch Cooked rice for serving
