Preheat oven to 425°F (220°C). 2. Line a baking dish or skillet with lemon slices. 3. Pat chicken dry, stuff the cavity with halved lemon and garlic head. 4. Loosen the skin and rub some under it; spread the rest over the outside. 5. Drizzle with olive oil and place breast-side up over the lemons. 6.
