@misojenkitchen: chewy, sticky, and sweet! these gaeseong juak are traditional korean rice donuts made with glutinous rice flour and glazed in a cinnamon rice syrup 🍩✨ traditional rice syrup gives these donuts their signature shine and sweetness. i used @ofoodusa rice syrup, made the traditional way with no corn syrup, just rice 🍚 it’s available on amazon if you want to try it for yourself! recipe guide: sift&mix 120g glutinous rice flour, 30g ap flour, 20g sugar, and a pinch of salt.
add 1 tbsp makgeolli + 2 tbsp hot water. knead for 5 min (add a little more water if it’s too dry). the dough should be stiff and hold its shape. this helps the donuts keep their form while frying. shape the dough into donuts, then fry at 120°c to let the centers cook through gently. once they float, turn the heat up to 160°c to crisp up the outside and get that golden color. for the glaze, simmer 100g traditional rice syrup with 30g water and 1 cinnamon stick for about 5 minutes, until large bubbles form and the syrup thickens slightly. keep it warm while frying the donuts. glaze the donuts (by tossing, dipping or pouring) and top with a pumpkin seed 🌰
