@andrejcooksfish: COOKING EVERY FISH IN THE WORLD 🐟 🌍 Episode 75 - Wels Catfish • BIN: Silurus glanis FR: Silure glane GER: Wels / Waller ESP: Siluro / bagre IT: Siluro SRB-CRO: Som ROM: Somnul • Welcome to part 1 of my Catch & Cook mini-series, where I’m fishing for local species in the Rhine river and cooking these with some of my favourite restaurants in Düsseldorf. We are kicking off at restaurant Ratatouille in Meerbusch, where my good friend Sami shows us how to barbecue catfish, served with traditional Persian Tahdig rice. • Ingredients (serves 4): 500-800g catfish fillet 1 shredded onion 2 shredded tomatoes 1/2 grated nutmeg 1/2 lemon juice 1g saffron Tahdig rice: 500g Basmati rice 500ml water Oil • Recipe: 1. Fillet the fish as shown in this reel and stick onto skewers. 2. Marinade: combine shredded veggies and spices in a bowl and marinate the fish in it overnight. 3. Tahdig rice: wash the rice well and put in a rice cooker with the water and oil. Cook for 25 min and flip onto a serving plate. 4. Over charcoals, grill the fish skewers on both sides for 6-8 minutes and serve with the rice and a fresh salad. Enjoy! • #catfishing #catfish #fishinglife #tahdig #catchandcook #fishrecipe
