Grew up in UK when Diana died, but I am Irish so no love to monarchy. But to explain it - you only bow to those of same rank or higher. Curtsy is for women, bow is for man. She BOWED to Diana. It was a signal she did not agree with her son, and therefore stood by Diana as not only same rank, but higher. Straight up, boss mum move. Whether you like monarchy or not, respect.
