Do you really think restaurants temper their steaks??? Do they just guess how many steaks they will go through? Throw away the ones they don’t sell? Health departments would have a field day.

tenderize, salt both sides and put it on a drying rack for a couple hours, takes it up a level. sear in smoking bacon grease in a cast iron to level up again. 140 internal, rest 10min. Win.

Big restaurant doesn’t temper a steak. Big restaurant sears 2 min per side, then in the oven till mid rare.

Salt it heavily to draw out extra moisture. This will give you a better char when your grilling or searing in a pan
