Garlic parmesan japanese long fries 🍟  Ingredients  4 large russet potatoes  1/2 cup cornstarch Salt to taste 1 tbsp garlic powder 1 tsp black pepper  Avocado Oil for frying  For garnish  1/2 cup freshly grated Parmesan cheese  1 tbsp freshly chopped parsley For the garlic parmesan mayonnaise: 1/2 cup mayonnaise 2 garlic cloves, finely grated 2 tbsp freshly grated Parmesan cheese 1 tsp lemon juice 1/2 tsp garlic powder 1/4 tsp black pepper Salt to taste 1 tsp olive oil 1–2 tsp water, if needed, to thin Method: Boil the potatoes until completely tender. Drain very well. Mash while they're hot. Add the cornstarch, black pepper, salt, garlic powder. Mix until you have a thick, smooth, moldable dough If the dough feels sticky or soft, add another 5–10 g corn starch. It should be firm enough to hold a shape. Once the potato dough is prepared, place it on a sheet of parchment paper. Cover the dough with another sheet of parchment paper and use a rolling pin to roll it out into an even rectangle, about 1/4 inch thick. Remove the top parchment paper and use a sharp knife or pizza cutter to cut the dough into long, even strips. Gently separate the strips and place them on a parchment-lined tray. Chill the potato strips for 30 minutes to firm them up before frying. Add the mayonnaise, grated garlic, Parmesan, lemon juice, garlic powder, black pepper, salt, and olive oil to a bowl. Mix until completely smooth and creamy. Taste and adjust the salt, lemon, or garlic according to your preference.If you want a thinner dipping sauce, mix in 1–2 teaspoons of water. Heat oil to 350°F (175°C). Carefully place the chilled potato strips into the hot oil. Do not overcrowd the pan or move them for the first 60 seconds, allowing the outside to set. Fry for 3–4 minutes, turning gently, until golden brown and crisp. Remove and drain on a wire rack or paper towels.  Garnish with freshly grated Parmesan cheese and parsley.
