Tartelettes Mousseline Recipe 🌰🤍 A true pâtisserie-style dessert – elegant, creamy, and perfectly balanced in flavor. 🥰 (makes about 7-8 pieces, 3″ / 7.5 cm) 🥧 Shortcrust Pastry Ingredients: • 150 g all-purpose flour (1¼ cups) • 30 g ground hazelnuts (¼ cup) • 50 g sugar (¼ cup) • 1 pinch of salt • 90 g cold butter, cubed (6 tbsp) • 1 egg yolk (M) 🤍 Preparation: 1. Mix flour, hazelnuts, sugar, and salt. 2. Rub in the cold butter until crumbly. 3. Add the egg yolk and quickly knead into a dough. 4. Flatten, wrap in plastic, and chill for at least 1 hour. 5. Line tartlet molds (use non-stick or grease well), prick the bases. 6. Chill for another 20–30 minutes. 7. Bake at 175 °C (350 °F) top bottom heat for about 25–30 minutes until golden brown. Let cool completely. 🍓 Fruit Gelée Ingredients (first layer): - 150 g strawberries (1 cup) - 25 g sugar (2 tbsp) - 1 tsp lemon juice - 2 g agar-agar (about 1 tsp) 🤍 Preparation: 1. Purée the strawberries and strain. 2. Heat with sugar and lemon juice. 3. Mix agar-agar with 2–3 tbsp water, stir in, and boil for 2 minutes. 4.
