Add both sugars and mix until combined (about 2 minutes). Mix in egg and vanilla.  Add dry ingredients and stir until just combined. Fold in chocolate chips.  Shape the tacos: Scoop about 3 tablespoons of dough, roll into a ball, and flatten into a thin circle (about 5–6 inches wide). Place on baking sheet. Repeat with remaining dough. Bake 8–10 minutes, until golden around the edges but still soft in the center.  Form taco shape immediately:  While still warm, gently drape each cookie over a rolling pin, on the side of a loaf pan, or between two cups to create a taco shell shape.
