Sauté onions until translucent. Add garlic. Sauté an additional 3 minutes. Add artichokes and tomatoes. Season with oregano, salt, and pepper. Deglaze with white wine, add beans and kale. Fiber, yall. The importance of fiber cannot be stressed enough, your gut health is a very large part of your immune system. Fiber isn't added to a lot of the foods we eat so we're getting less of it than our parents. Eat more veggies and fiber, and get screened as often as you can!

I had a colonoscopy in March after noticing blood in stool and I had to INSIST on one cause doctors were trying to write it off. Fortunately no polyps found but it’s scary how dismissive the medical field is of people under 45 getting it done despite the rise in colorectal cancer among that age group

I had my first precancerous polyp at 24. Biggest factor doc said was genetics, fiber helps but I'm vegan and eat plant based. It's not our food doing it to everyone, it's genetics, stress and healthcare too. Stay safe, get checked

I was awake for my colonoscopy (despite the doctor's desperate attempts to knock me out), and it was fascinating. Once the doc came to terms that I was awake, not freaking out, and interested, he had a good time explaining stuff. But yeah, the prep sucked.
