🍩 Chinese Buffet Sugar Donuts As a kid, if it was my turn to pick dinner, I always chose a Chinese buffet, but so I could have sugar donuts and sesame chicken for a full meal. We don’t really go to buffets anymore, but I couldn’t stop thinking about these donuts, so I had to make my own. Recipe below👇🏻 Ingredients 	•	2 ½ cups all-purpose flour 	•	¼ cup granulated sugar (reserve 1 tsp for blooming yeast) 	•	2 ¼ tsp (1 packet) active dry yeast 	•	½ tsp salt 	•	¾ cup warm milk (about 110°F) 	•	2 tbsp unsalted butter, melted 	•	1 large egg For Frying & Coating: 	•	Avocado oil (for frying) 	•	1 cup granulated sugar (for coating) Instructions 1. Bloom the Yeast 	1.	Warm the milk to 110°F (warm but not hot). 	2.	Stir in the active dry yeast + 1 tsp sugar. 	3.	Let sit for 5–10 minutes, until foamy and bubbly on top. 2. Make the Dough 	1.	In a large bowl, whisk together flour, remaining sugar, and salt. 	2.	Add in the foamy yeast mixture, melted butter, and egg. 	3.	Stir until dough comes together. 	4.	Knead for 6–8 minutes by hand (or 4–5 minutes in a stand mixer) until smooth and elastic. 	5.	Place dough in a lightly greased bowl, cover, and let rise 1 hour or until doubled in size. 3. Shape the Donuts 	1.	Roll dough to about ½–¾ inch thick on a floured surface. 	2.	Cut into circles with a round cutter (about 3 inches wide). 	3.	Gather scraps, re-roll, and cut again. 	4.	Place each shaped donut onto a small individual square of parchment paper on a tray. 	5.	Cover lightly and let puff for 15–20 minutes while heating oil. 4. Fry the Donuts 	1.	Heat oil in a deep pot to 350°F. I highly recommend clipping a candy thermometer to your pot so you can monitor the oil, and they fry evenly every time. My favorite candy thermometer is linked in my Amazon storefront. 	2.	Pick up each donut with its parchment square and gently lower into the hot oil. 	3.	After a few seconds, the parchment will release—use tongs to remove and discard it. 	4.	Fry donuts 1–2 minutes per side, until golden brown. 	5.	Drain briefly on paper towels. 5.
