Today we are at the Michel-starred restaurant Agata‘s Restaurant in Düsseldorf, where Chef Marcel Förster shows us how to barbecue freshly caught fish and fresh asparagus on a konro grill. Special props to Max Schmidt, who let me use the perch he caught 😅🙏 • Ingredients (serves 2): 1 x 1kg perch 6-8 white asparagus Barbecue sauce: 250g tomato juice 125g ketchup 125g honey 150g soy sauce 100g yuzu juice 170g apple vinegar Chimmichurri: 150g lamb’s lettuce 1 garlic clove 1 lime 1 shallot 25g pickled jalapeño • Recipe: 1. Fillet the fish as shown in this reel and stick onto skewers. 2. Barbecue sauce: mix all of the ingredients in a sauce pan and reduce until sirupy. 3. Chimmichurri: mix all ingredients in a blender. 4. Grill the fish skin side down until almost done, flip and glaze generously with the barbecue sauce and finish grilling on both sides until done.
