Growing up, I wasn’t always proud of my roots and culture, especially when it came to lunch time at school. Bringing a dish like this curry would spark mean comments about the smell and look, which made me feel insecure and embarrassed. I’m grateful to have grown into myself and support our kids to be confident in who they are and where they come from. This AAPI month, I’m sharing a recipe for Hong Kong Style Chicken Curry that my mom made for us growing up, which is a source of comfort and love! #HexcladPartner I prepped the ingredients in the AM while Dan was the main point of contact for the kids, then while they napped as a break from work, I cooked the curry so it was ready for the kids when they woke up. They loved it (as a toddler mom x 4, it’s not always the case) and devoured 2 big warm bowls outside after their nap 🩷 My mom bought me my first @hexclad hybrid wok when I became a mom because she loves hers so much. Mine is still in one of the many boxes we have left to unpack, but thankfully my mom has also had one for years that we can use while we’re visiting. How to prepare: - Chop 1 large potato, 5 carrots, and 1 yellow onion - Mince 2 cloves garlic & smash 1 inch ginger - Slice 1lb of chicken thighs - Marinate chicken with 1 tbsp sesame oil, 2 tsp cornstarch, 1 tbsp sweet soy sauce, 1 tbsp Shaoxing wine, & 1/2 tsp white pepper - Oil @hexclad wok, stir fry garlic & ginger, add onions, 2 tbsp curry powder, 1 tbsp turmeric powder, & stir until fragrant - Mix in carrots and potatoes -Add chicken and cook for 3 minutes (this can be done separately to brown, but I prefer a one-wok meal for efficiency)  - Add 32oz chicken broth to cover ingredients and bring to boil - Lower to simmer and cover for 20 min until vegetables are fork tender - Add 1 tbsp soy sauce, 1 can of coconut milk, & cornstarch slurry (2 tbsp cornstarch + 2 tbsp water) - Cook for 5 minutes and serve over rice or noodles #stirandstyle #chinesecooking #cooking #Recipe #curry #hongkong #hexclad #MomsofTikTok #toddlermeals #CookingHacks #EasyRecipe
