THEY SAY WE STEAL FOOD… SO I MADE THIS… YOU’RE WELCOME 🫶 HUMMUS CHICKEN ALFREDO  - 14.3 oz fettuccine or tagliatelle - 2 tbsp salt, for pasta water - 28.6 oz (1.75lbs) boneless skinless chicken breasts  - 1 tsp fine salt, for chicken  - 1 tsp ground cumin | - 1 tsp smoked paprika  - 1/2 tsp garlic powder  - 2 tbsp olive oil, for searing  - 10.7 oz good quality hummus (shop-bought or homemade) - 3.5 tbsp tahini  - 4 garlic cloves, minced - 1.25 cups reserved pasta water  - 1 lemon, zested and juiced - 3 tbsp extra virgin olive oil, for the sauce  - 14 oz tincooked chickpeas, drained - 1 pinch fine salt and black pepper, to taste - 2 tsp za’atar, garnish  - 1/2 cup flat-leaf parsley, roughly chopped  - 2 tbsp extra virgin olive oil - 4 lemon wedges, to serve 1. Mix together salt, ground cumin, paprika and garlic powder till fully combined. Flatten chicken breasts gently till levelled and pat dry, cover with seasoning on all sides 2. Bring very salted water with splash of olive oil to boil and cook pasta 2 mins before the finished time on the packet… you want al dente. Once cooked, take a cup of pasta water - THIS IS CRUCIAL!!! Drain and run under cold water and toss in olive oil to prevent sticking  3. Heat olive oil in a pan over medium high heat until shimmering and add chicken. Sear without moving for 4 mins then flip and cook for a further 4 mins. Remove from pan and let rest. Let pan cool down slightly and lower heat to medium 4. In the same pan, add minced garlic and cook till fragrant gently until slightly coloured. Add hummus and tahini, stir until they’re combined. Add pasta water and stir until it creates a loosened sauce 5. Add juice of 1 lemon, salt + pepper to taste. Then add cooked, drained chickpeas for 2 mins till they’re warmed 6. Add cooked pasta back into mixture and toss until all pasta is smothered in sauce  7. Lay pasta in bowl, top with cooked, sliced chicken breast, and top with za’atar, olive oil and chopped parsley.
