Mix everything except flour and salt in a bowl. 2. Add flour and mix with a spatula until just combined. 3. Sprinkle the salt on top — it will absorb during stretching. 4. Cover and rest for 15 minutes. 5. First fold: Stretch the dough and fold like an envelope. 6. Rest again for 15 minutes. 7. Second fold: Add dried tomatoes, jalapeño cheese, and basil. Try to gently fold them inside the dough as shown in the video. 8. Cover and refrigerate overnight. 9. Next day: Remove from fridge 30 minutes before shaping. Let it sit for 15 minutes or more to warm up. 10. Shape gently, keeping air bubbles in. 11. Place on a tray and let it rest while the oven heats. 12. Bake at 420°F (215°C) with a pan of hot water inside the oven to create steam. 13.
