Izote flower, you should cook it, in my country we stir fry it withs ome seasoning and then scramble it with eggs It helps with the bitter taste and Its so good!

They have naturally occurring saponins so eating raw may cause stomach ache. I live in New Mexico and this plant grows everywhere. Every spring I harvest and I love to sauté with onions and meat or eat with eggs. Only eat the leaves cuz the middle bits are bitter
