One pan chicken thighs with potatoes. An easy, flavour-packed oven dinner perfect for busy weeknights.   Recipe  6-8 chicken thighs (bone-in, skin-on or boneless) 4-6 medium potatoes, halved or cut into thick wedges 6 long-stem broccoli  Seasoning Mixture 3 tbsp melted butter 2 tbsp olive oil 1 tsp paprika 1 tsp cumin ½–1 tsp chilli flakes (to taste) 1 tsp garlic powder 1 tsp onion powder ½ tsp black pepper 1 tsp all-purpose seasoning 1 tsp salt (adjust to taste) 1 tsp brown sugar 1 tsp dried thyme 1 tbsp tomato paste 1–2 tbsp chopped fresh parsley Greek Tzatziki 1 cup Greek yogurt ½ cucumber, grated and squeezed dry 1 small garlic clove, minced 1 tbsp olive oil 1 tsp lemon juice Salt to taste Fresh dill or parsley (optional) Method 1. Preheat Preheat your oven to 200°C (400°F). 2. Make the Seasoning Paste In a bowl, combine all the seasoning mixture ingredients and mix until you have a smooth, rich spiced butter paste. 3. Season the Chicken & Potatoes Divide the paste between the chicken and the potatoes. Rub the chicken thoroughly (under the skin too if using skin-on). Toss the potatoes until evenly coated. 4. Assemble Lay the potatoes cut side down in a single layer on a large baking tray. Place the chicken thighs on top of the potatoes. Cover the tray tightly with parchment paper . 5. First Roast (Covered) Bake for 30–35 minutes covered to allow everything to soften and release flavour. 6. Turn & Roast Uncovered Remove from the oven, turn the chicken pieces and flip the potatoes. Return to the oven uncovered for another 20–25 minutes until golden and beginning to crisp.add lemon slices if desired  7. Add the Broccoli Lightly toss the long-stem . Add it to the pan around the chicken and return to the oven for 10–15 minutes, until: The chicken is cooked through (75°C / 165°F internal temperature) The broccoli is tender with slightly charred edges Optional: Broil/grill for 3–5 minutes at the end for extra crispiness. 8. Make the Greek Tzatziki Mix all tzatziki ingredients together until smooth and creamy. Chill for at least 20 minutes before serving for best flavour.
