A quick, healthy, one-pot style meal with high protein and low calorie content, featuring baked salmon in a flavorful teriyaki glaze, paired with steamed broccoli and rice. Ingredients: - 2 salmon fillets (about 4-6 oz each) - 1/4 cup soy sauce (low sodium) - 2 tbsp honey or maple syrup - 1 tbsp rice vinegar - 1 clove garlic, minced - 1 tsp ginger, grated - 1 cup broccoli florets - 1 cup cooked brown rice (or white rice) - 1 tsp sesame oil (optional) - sesame seeds for garnish (optional) Instructions: 1. While salmon bakes, heat remaining glaze in a small pan for a quick sauce, if desired. 7. Serve each salmon fillet over a bed of rice, topped with steamed broccoli, and drizzle with extra glaze or sesame oil.
