Potato Series: Episode 18 - Katlesi za Mayai Welcome to another episode of my potato series and today we’re making these crispy katlesi za mayai 🤤 They are nice and crispy on the outside with a soft, flavourful potato coating and a boiled egg centre. They’re perfect as a snack or appetiser. Serve with chilli sauce and kachumbari.  You’ll need: For the potato mixture: *potatoes *1 tsp garam masala *1 tsp red chilli powder *1 tsp garlic paste *fresh spring onions, chopped ( you can add more veggies like dhania, carrots or bell peppers if you like but I prefer them with just spring onions) *salt to taste For the filling: *boiled eggs For the coating: *all purpose flour *eggs, beaten Optional filling: *minced meat *peel and wash your potatoes then cut them into chunks *boil until fork tender then drain well *mash the potatoes until smooth *add the garam masala, red chilli powder, garlic paste, spring onions and salt *mix until everything is well combined *peel your boiled eggs *you can use whole eggs or cut them in half like I did *using half eggs gives you smaller katlesi that are more aesthetic and easier to eat *take a portion of the potato mixture and flatten it in your hand *place the egg in the centre and carefully wrap the potato mixture around it *repeat until all the katlesi are shaped *you can also use minced meat as the filling instead of eggs *place the katlesi in the freezer until firm *lightly coat each katlesi in flour *dip them into the beaten eggs until fully coated *heat oil in a pan over medium heat *fry until golden brown and crispy on both sides *remove and place on a paper towel to drain excess oil Serve and enjoy 🤗
