I believe it takes around 6 hours for collagen to release from the bones. The jelly texture difference between 1 hour and 12 hours is a huge difference

the term bone broth kind of emerged as a popular thing thanks to that whackadoo chef dude & other self help natural healing guru types a few years ago. Then it somehow became a separate commercial thing... it's all stock it's just variations

To me bone broth is when I roast my bones for at least an hour and then simmer them in the slow cooker for 24-48 hours purely to get all the nutrients out of the bones. Stock is bones, veggies and aromatics to make a tasty liquid for a base for stews, soups etc

The difference is also the stock content cause you don’t usually add much or any salt to bone broth whereas you do to stock.
