@gymtrav: Satay Chicken Meal Prep • 250g uncooked long grain rice • 750g chicken breast (raw) • 60g peanut powder (like PB2) • 40g peanut butter • 250g chopped broccoli • 400ml light coconut milk • 200ml chicken stock • 1 medium onion • 60ml soy sauce • 15g peanuts • Seasonings (adjust to taste): • Curry powder • Chilli flakes • Salt & pepper • Plenty of garlic powder Mix everything together, chuck it in the oven at 180°C for 45-60 mins until the sauce thickens and the chicken’s cooked through.
